INGREDIENTS:
3 Aubergines
50 g Pine Nuts
1 Garlic Clove
35 g Feta Cheese
10 g Flat Leaf Parsley
150 g Rocket
4 Fresh Figs
25 g Walnuts
Olive Oil
2 tbsp Honey
Cocktail Sticks

STEP 1: SLICE AUBERGINES
Using a mandolin, slice the aubergines into medium slices and brush each side with a little olive oil. Place on a hot griddle pan until soft and golden.

STEP 2: BLEND FOR PESTO
Place the pine nuts, garlic, parsley and a few tbsp of olive oil into a blender.

STEP 3: MAKE ROLLS
Spread the pine nut mix onto each piece of aubergine and then crumble some feta cheese on top. Roll them up and use a cocktail stick to hold them in place.

STEP 4: MAKE SALAD AND SERVE
For the side salad, mix the honey with a little olive oil to make the simple dressing. Cut the figs into quarters and chop the walnuts. Add them to the rocket and drizzle over the honey dressing.
