INGREDIENTS:
400 g Fusilli Pasta
2 Leeks
3 Cloves of Garlic
200 ml Chicken Stock
100 g Frozen Peas
100 g Frozen Sweetcorn
120 g Ricotta
200 ml Milk
200 g Cooked Chicken
120 g Parmesan Cheese
120 g Cheddar Cheese
Salt and Pepper for Seasoning

STEP 1: COOK PASTA
Cook the pasta in a large pan of salted water.

STEP 2: COOK INGREDIENTS
Chop the leeks and fry in butter until they soften, then add the garlic. After a minute or so, add the stock and cook until most of the liquid has evaporated. Now add the peas and sweetcorn and cook for two more mins.

STEP 3: MIX TOGETHER
Drain the pasta and return to the pan. Pour the leek mixture into the pasta and along with the chicken, milk and ricotta and stir through. Season with salt and pepper.

STEP 4: POUR INTO BAKING DISH AND COOK
Spoon the mixture into a baking dish and top with the parmesan and cheddar. Bake in the oven for 20-30mins at 180 degrees until the cheese is starting to brown on top.

    This is not essential but I enjoy watching the cook of the meal eating
    his/her creation after it’s finished! My father always says to me that you
    shouldn’t trust a cook who doesn’t taste his own food. In another note I
    think it looked great – and as pointed out in the video it’s a good meal
    for getting rid of scraps!
