Chicken quesadillas are a family favourite! Let’s be honest, who doesn’t love chicken, cheese and tortillas? This dish is great to make with the kids any day of the week and one they’ll certainly enjoy. Michael Underwood shows you how to create them with this quick and easy recipe, enjoy!

1 Packet of Flour Tortillas
500 g Chicken Breast
50 g Chopped Spring Onions
20 g Butter1 Red Pepper
2-3 tbsp Hot and Spicy Chicken Fry Mix
1 tsp Ground Cumin
250 g Cheddar Cheese
1/2 tsp Oregano
Tub of Tomato Salsa
Salt and Pepper
Rape Seed Oil For Frying
Guacamole and Sour Cream to Serve
STEP 1: CHICKEN
Place the chicken in a bowl and add the hot and spicy seasoning and fry for 6-7 minutes.
STEP 2: ADD OTHER INGREDIENTS
Add the red pepper and fry for another minute before finally adding the spring onions, cumin, oregano and salsa. Continue frying until the chicken is cooked through.
STEP 3: PREPARE TORTILLAS
Brush one side of a flour tortilla with melted butter and place it butter side down on a non stick foil lined baking tray.
STEP 4: ASSEMBLE QUESADILLAS
Spread a layer a grated cheese, then spoon on a generous amount of the chicken mixture followed by some more grated cheese. Finally, place another flour tortilla on top and brush with melted butter.
STEP 5: COOK AND ENJOY
Cook in the oven at 190C degrees for about ten minutes or until tortilla is crispy and golden and enjoy!
